Al Fitr cookies, Al Qaraqesh or Mnen, are one of the favorite Eid Al Fitr recipes. It is delicious and admired by all, besides, it is one of the essential morning meals of Eid Al Fitr along with tea and coffee.
Ameera Aboulseoud, an Alexandrian Egyptian engineer based in the United States and mother of a boy and a girl, always presents several Egyptian dishes to feel the warmth of her memories in Alexandria during festivals and family occasions, especially desserts presented at special times.
She recalled the special cooking methods and the additions of herbs and spices by the Alexandrians in their dishes, thus, Aboulseoud represented an easy recipe for the Al Qaraqesh or Mnen with all its tricks.
4 cups flour
1 cup melted ghee (Should have kitchen temperature)
½ tablespoon of yeast
1 tablespoon of sugar
½ teaspoon of salt
1 tablespoon dried fennel
1 tablespoon of dried anise
1 tablespoon toasted sesame
The first step is to add all the ingredients to the blender and add 1 cup of water, mix well for five minutes and let the dough rest and activate the yeast for 15 minutes.
Then roll out the dough with the wooden rolling pin to form a rectangle and divide it by the knife to form pieces of Qaraqesh or Mnen of the same size.
After that, place the pieces of dough on the baking sheet and let them rest for a few minutes, and heat the oven well.
Move the Al Qaraqesh or Mnen pieces into the well preheated 180 degree oven on the center oven tray for 30 minutes, or for 20 minutes if using the convection fan in the oven.
