Cookies were my entry point into the kitchen. I spent hours making grocery store cookie mixes with whatever fired my imagination. I watched in awe as my grandmothers and great aunts made batch after batch. I noticed the power of a simple cookie.

These are the most accessible baked goods. They are portable, portable, not fussy at all, and yet just one bite of a cookie can bring a person to happiness like no other dessert can. My favorite person to bake cookies for is the one who least expects it – showing up at the dentist with a fresh batch or putting a few in my mailbox for the postman.

My day revolves around cookies. I try to incorporate the treat into every meal: a Peanut Butter S’mores bar for lunch, a Cocoa Mint Chip cookie for a late-night snack. I like to take inspiration from some of my favorite desserts (chocolate mint cookies and cream ice cream, fireside s’mores with a cup of Reese’s Peanut Butter) and imagine them as a cookie. My favorite pastry for special occasions is a fresh and warm cinnamon roll. The buttery cinnamon swirl, the gooey cream cheese frosting – I knew I had to dream of it in a cookie.

The best part about these cookies is that they are totally appropriate to eat them any time of the day you would normally eat a cinnamon roll: breakfast, midday snack, midnight craving. If your day is about cookies too, you’ll love these.
