FOR THE COOKIE DOUGH

3 bed.

all-purpose flour, plus more for the surface

1 ea.

(2 sticks) softened butter

1 C.

pure vanilla extract

FOR THE ROYAL ICING

1/4 tsp.

milk, and more for thinning

1/4 tsp.

almond extract (or pure vanilla)

  1. Make the cookie dough: In a large bowl, combine flour, baking powder and salt.
  2. In another large bowl using a hand mixer or in the bowl of a stand mixer using the paddle attachment, beat the butter and sugar until fluffy and pale in color. Add egg, milk and vanilla and beat until combined. Gradually add flour mixture until fully combined.
  3. Form a disk and wrap in plastic. Refrigerate 1 hour.
  4. When baking, preheat the oven to 350º and line two baking sheets with parchment paper. Lightly flour a clean work surface and roll out the dough to 1/8″ thickness. Cut out snowflakes and transfer to baking sheets. Freeze for 10 minutes.
  5. Bake cookies until edges are lightly browned, 8 to 10 minutes. Let cool completely before frosting.
  6. During this time, make icing: In a medium bowl, combine powdered sugar, corn syrup, milk and almond extract. Add more milk a teaspoon at a time to thin, if needed.
  7. Transfer half of the frosting to a small bowl and color with blue food coloring. Transfer the two frostings to two piping bags and the glazed cookies. Decorate with pearl sprinkles.
