Fluffernutter Cookie Recipe: A Peanut Butter and Marshmallow Lover’s Dream | Cookies


With a love for peanut butter cookies and a soft spot for marshmallow creme, my eyes widened like saucers when I came across a fluffernutter cookie recipe. Yes please. The original recipe called for peanut butter chips, but thinking that was a little too much and unnecessary, I left them out.

This Fluffernutter cookie recipe gets messy and takes a bit of patience when applying the marshmallow fluff, but the end result is totally worth it. If you love fluffernutter sandwiches, try this cookie recipe ASAP.

Ingredients


Here’s how to do it:


  1. Combine cornstarch, baking powder, baking soda, salt and flour in a bowl. Put aside.

  2. Cream butter and peanut butter with an electric mixer until light and fluffy, about 1 minute.

<li>Add white sugar and brown sugar and beat until pale and fluffy, about 2 minutes.  Beat egg and vanilla.

<li>Add flour mixture and beat until smooth.

<li>Form a ball with some of the dough and flatten it into a small disc on a baking sheet lined with parchment paper.  Put some of the marshmallow fluff in the center (I used a small condiment spoon).  Take the disk and wrap the dough around the marshmallow fluff.  Put it back on the baking sheet.

<li>Repeat with more dough until the baking sheet is full, leaving space between the dough for it to spread.

<li>Bake in preheated 350 degree F oven for about 9-11 minutes or until cookies are golden around edges.  Let cool on baking sheet for a few minutes before carefully removing to cool completely.
