Ukrainian Oatmeal Cookies Recipe: These Easy Oatmeal Cookies Are Thin and Crispy | Cookies

Everyone seems to have their own take on oatmeal cookies. This Ukrainian oatmeal cookie recipe is thin, crispy and the perfect cookie to dip in coffee or milk.

Servings: Makes 2 dozen


Here’s how to do it:

  1. Combine flour, baking powder, baking soda and salt in a bowl.
  2. In a bowl of a stand mixer or with a hand mixer, cream the butter and sugars together until light and fluffy. Add egg and vanilla and beat until incorporated. Add the flour mixture and mix until just combined. Slowly start adding the rolled oats until well combined.
  3. Roll the dough into balls and place them on baking sheets lined with parchment paper. Press down on the balls with your fingers to flatten them slightly.
  4. Bake in preheated 350 degree F oven for about 12 to 15 minutes or until cookies are golden brown and edges are crisp.

To note: For crispier cookies, bake one cookie sheet at a time.
